Last Saturday, January 16th, one of the greatest events of this 2021 summer season was held in Punta del Este. At Bodega Garzón, one of Uruguay’s privileged places, where visitors can enjoy excellent wine and gastronomy, Francis Mallmann, renowned Argentinian chef and culinary director of the restaurant at Bodega Garzón, gave a talk about his view on the future of gastronomy and together with his team, he prepared a special menu based on his traditional fire cooking.
Strictly following the sanitary protocols set forth by the Ministry of Public Health, 70 people enjoyed this event on a spectacular evening, where Francis shared with those present, his years of experience in the culinary world and his vision of the future.
The evening continued with a dinner prepared in the winery’s fire pit, with a 3-step menu especially designed for the occasion which included a reception of white garlic and clay oven empanadas from Mendoza paired with Pinot Noir Rosé Reserva Magnum 2020 and Sparkling Blanc de Blanc, a starter of breaded eggplant, organic tomato, avocado mayonnaise and basil paired with Albariño Single Vineyard 2020. There were two different options of main dishes; sole on a bamboo bed or slow rib eye accompanied by a garnish of pyramid potatoes to honor the Andes and string cabbage paired with Tannat Single Vineyard 2016, and to top it off a Napoleon dessert of dulce de leche with custard, ganache with ice cream and red berries paired with a Late Harvest wine.
The dinner was paired with wines from a special edition with labels signed by Francis Mallmann which included the phrase “wine is hope”.
At the end of the night, two of these special edition Tannat Single Vineyard 2016 bottles were raffled among the guests.
