Pairing
Uruguay’s flagship wine, with great structure, robust character, pronounced tannins, and distinctive mineral notes. It pairs perfectly with regional dishes such as local East Coast lamb, slow-cooked ribeye prepared in the dome, T-bone steak, or grilled picanha. It also complements all kinds of croquettes, lamb empanadas with Yajua sauce, or traditional pesto. It is an ideal match for Tannat risotto with Parmesan cheese. A faithful companion to medium- to high-intensity aged cheeses, especially goat cheese, Gouda, or the traditional Colonia cheese coated with Tannat and wrapped in sheep’s wool.
